How to: Blodgett Ovens Repair — Troubleshooting Guide

When it comes to cooking equipment, Blodgett has some of the best products available. They produce a wide range of models that can whip together all the signature dishes that make your restaurant a popular place. If your unit ever breaks down, it can be tough for your business. If you're having trouble with your Blodgett oven, we've got some tips for identifying common problems.

Some of these issues may need to be fixed by an authorized service technician. The following list contains some common issues associated with popular convection ovens and deck ovens.

Troubleshooting Guide: Blodgett Convection Oven

Blodgett offers multiple convection ovens, ranging from Mark-V to DFG-100/200 and Zephaire series. Convective cooking involves using hot air to cook foods quickly without overcooking them. Here are some common problems you may encounter.

  • The Oven Is Not Heating Up or Firing: Check the control panel or setting, as well as the oven doors.
  • Taking Too Long To Preheat: Check if the gas valve is on and if the quick disconnect is connected. Make sure the gas pressure is not too low as well.
  • The Convection Fan is Not Running: Check if the oven doors are open, as well as the delay feature and control panel.
  • Food is Not Baking Properly: Make sure to clean your oven to keep it ventilated and prevent this

The oven is Not Heating Up or Firing

Before looking into any major issues, first, check if the stove isn't plugged in or if there's no gas. There may be several reasons for this:

  • The Control panel's power switch is off
    • How to fix it: Set the control panel to "cook" or "oven on."
  • The control setting is below ambient temperature
    • How to fix it: Set it to the desired temperature.
  • The oven doors may be open:
    • How to fix it: See if either oven door is open. Make sure there isn't anything blocking the door or if the seal is broken. If the door won't close properly, check for damage to the door gaskets or hinges.

Taking Too Long To Preheat:

You've waited too long for the oven to heat up. Check to see if the fan delay is active. Turn off this function so your oven can get hot faster. If your model doesn’t have this feature or if the problem continues, there may be a problem with the primary temperature controller. It needs to be fixed by a qualified electrician.

Gas-related problems include these common causes:

  • The gas valve is not turned on
    • How to fix it: The unit's fuel valve may be stuck open or closed.
  • The quick disconnect may be disconnected
    • How to fix it: Check all gas connections on your tank and make sure the quick disconnect is connected.
  • Gas pressure is too low
    • How to fix it: If you notice the pressure in your oven is too low when cooking, contact your local utility company for help.

The Convection Fan is Not Running

If you don't fix the problem, your unit won't operate properly. This can definitely halt your business operation. Before doing any kind of repair, first, check if the oven is turned off or the circuit breaker has been tripped. Both are common reasons why convector fans don't run. If either isn't the cause, then look for the following:

  • The oven doors may be open:
    • How to fix it: The oven may be stuck because of an obstruction, a broken hinge, or damaged gaskets.
  • Delay feature is activated:
    • How to fix it: Selected models have a convective delay that can be adjusted. Turning off this feature will prevent it from delaying the fans from turning on.
  • The power switch of the control panel is off:
    • How to fix it: Set the control panel to either "cook" or "oven on"

Not Baking Properly

Baking issues can occur at any time. Regularly clean your oven to keep it ventilated and prevent any serious problems from occurring. Baking can be affected by other factors too.

Call an authorized service technician if you notice any issues with proper ventilation, incorrect programmability on computerized controls, and/or a thermostat out-of-calibration,

Troubleshooting Guide for Blodgett Pizza Deck Oven

Whether you run a small bakery or a large chain restaurant, Blodgett 1048 and 1060 series deck ovens can easily cook pizzas or bakes. Deck ovens use radiant and conduction heat to bake your food. If your unit isn’t performing at its best, look for the following potential causes.

The Bottom Heat is Too High

If the cooking is too strong at the bottom of your dish, you may need to lower the gas pressure or fix a defective flue. Both would require a certified technician to handle them. Strong Bottom baking refers to being associated with cook temperature. For example, if there is too much bottom heating, decrease the oven temperature and cook for longer.

Baking is Too Uneven

Another thing why deck ovens are usually used is because of their ability to bake evenly.

If you notice uneven heating, either fluctuating gas pressures or poor ventilation may be an issue. Both would require a professional to handle them. If either doesn't appear to be the problem, then check for the next thing.

  • The oven door is open for too long
      • How to fix it: Don't open the oven door for too long or frequently during the time when your food is in the oven.
  • Pans used are warped:
    • How to fix it: If your pans are so badly damaged that they hinder even cooking, then you need to replace them. Change the pan when this happens.
  • The dough is poorly scaled:
    • How to fix it: If you scale your dough consistently, you won't end up with unevenly baked bread.

The Outcome of Food is Always Burned

Like strong bottom baking, burnt food could be associated with an incorrect oven temperature. Check whether your thermostat is turned up too high and lower the setting accordingly. If that isn't the problem, check for these things and have them fixed by a professional.

  • Worn out heat deflectors
  • Thermostat out of calibration
  • High bypass flame
  • High gas pressure

The Outcome of Food is Always Dry

There are several things to consider if your food dries out during baking with this oven.

Problems can be linked to:

  • Faulty flue or thermostat that's out of calibration: If this happens, you would have to call for a service company.
  • You probably didn't mix water with ingredients: Make sure to use enough liquid when making your dish to avoid this.
  • Temperature may be too low: Increase your oven temperature.

Extended Baking Time

If you need to bake longer than usual, it may be because there's not enough air circulation or because the oven isn't ventilated properly. They both require professional help from a service company or technician to resolve them.

Check for other non-technical factors like:

  • Setting of temperature is too low: If the temperature setting in your oven is too low, increase the cooking time accordingly.
  • Door must have been excessively opened: Don't open the oven too often, so you don't disrupt baking.
