The thick foam insulation and removable, airtight gasket ensure that if the starting temperature of the contents of the pan is 189°F, it will only fall to 175°F after a whopping four hours, and for cold foods, if the starting temperature is 33°F, it will only rise to 36.5°F after a full four hours which is remarkably handy for any caterer.
